1 large potato for ever 2 people
1/2 pound bacon, cut in 1/2 inch strips
1 onion, thinly sliced
3 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon pepper

3 to 4 tablespoon butter, cut into chunks
1/4 cup water

Directions:
In a deep roaster pan put first 6 ingredients in pan and toss to combine. Sprinkle with water and butter on top. Cover - Bake 1/2 hour - Uncover and bake 1/2 hour or until brown and Crispy on sides.

Bake at 400º
