16 oz. spaghetti or linguine
1 T olive oil
3 slices smoky bacon, chopped
1 lb. lean ground sirloin
1 med. onion, chopped
3-4 garlic cloves, chopped
2 tsp. hot sauce
1 T Worcestershire sauce
1/2 C beer
1 (14 oz) can tomato sauce
1 (14-ounce) can, chopped or crushed fire roasted tomatoes
8 oz. sharp cheddar cheese
4 green onions, chopped

Cooked pasta to al dente. Over med-high heat in a deep skillet cook bacon in olive oil. Brown and crisp bacon, 5 minutes.Remove and drain. Drain off excess fat . Add beef and crumble as it browns, 3-4 minutes. Add onions, garlic and stir into meat. Season with salt and pepper, hot sauce and Worcestershire. Add 1/2 C beer and deglaze the pan. Cook 5-6 minutes more, then sir into tomatoes and tomato sauce. Add hot pasta to meat and sauce and combine. Serve in shallow bowls. Sprinkle on cheese and scallions.
