Dressing:
1/3 c. Vinegar
1 c. Oil
1 tsp. Salt
1 tsp. Celery Seed
1 med. Onion, chopped fine
1 tbsp. Prepared Mustard
1 c. Sugar

Salad:
1 pkg. Spinach, washed & drained
1 can Mandarin Oranges, drained
Crumbled Bacon (optional)

Directions:
Dressing: mix all ingredients together. Shake well (does best in blender). Refrigerate. Makes dressing for 2 Spinach Salads. Note: this dressing is best when made a day or two ahead to blend flavors. It will keep for a couple of months in the refrigerator (Mom says, "Ours never lasts that long!").

Salad: toss spinach, oranges, and dressing together. Sprinkle with crumbled bacon, if desired.
