3 1/2 cups sugar
1/2 teaspoon salt
1 cup (8 ounce) cream
1/4 cup butter or margarine or butter
3 tablespoons light corn syrup
1 cup mashed ripe bananas ( 3 medium )
1 tablespoon vanilla
1/2 cup chopped ( medium fine) walnuts

Into a heavy 2 1/2 quart saucepan, put in the sugar,salt,cream,butter,corn syrup,and bananas. Over moderate heat, stirring constantly, bring to a boil; over low heat continue boiling,,still stirring constantly until mixture reaches 238 degrees on a candy thermometer.
Cool without stirring until the temperature on the candy thermometer drops to 110º. Add vanilla and nuts and beat until candy becomes thick and begins to lose its gloss. Turn into a buttered 8x 8 x 2 inch cake pan. Let stand until cool. Cut into squares.
