1 package 10 oz. frozen chopped spinach
4 eggs
1 3/4 c. Evaporated skim milk
1 T. Minced onion
1/4 tsp. garlic powder
Salt and pepper
4 slices crisp bacon
1/4 c. Grated Monterey jack cheese

Directions:
Directions:
Cook spinach according to directions. Drain well. Beat eggs with milk and seasonings. Add onion. Crumble bacon. Place chopped spinach in 8 inch greased pan. Place crumbled bacon on top of spinach. Add grated cheese. Pour milk mixture over all. Bake at 350º for 35 minutes or until knife comes out clean.
