3/4 c. rice flour
1/4 c. tapioca flour
2 tbsp sugar
1 tsp salt
1/4 c. white sesame seeds
1/2 c. shredded coconut (dried or frozen)
3/4-1 c. water
8 bananas, ripe but firm
3 cups vegetable oil

Directions:

1. Mix both of the flours, sugar, salt, sesame seeds, and shredded coconut in a mixing bowl. Add water slowly until the mixture is thick enough to coat the bananas; about the consistency of pancake batter
2. Cut bananas in half crosswise, then slice those pieces lengthwise into 2-3 pieces. Heat oil in a fry pan over medium heat to reach 350○F. Dip banana pieces in the batter and fry for about 5 minutes (or until golden) in the oil that has been heated to 350○F. Turn banana pieces halfway to evenly brown the pieces.

This was my favorite street food dessert when traveling Thailand. Its best eaten hot.
