1 1/2 c. all-purpose flour
2/3 c. whole wheat flour
2 tsp. baking soda
1/4 tsp. salt
2 tsp. ground cinnamon
1 c. firmly packed brown sugar
2 c. grated carrots
1/3 c. raisins
3/4 c. egg substitute
3/4 c. nonfat buttermilk
1 (8 oz.) can crushed pineapple, drained
3 Tbsp. vegetable oil
2 tsp. vanilla extract
Vegetable cooking spray

Orange Cream Cheese Topping:
1 (8 oz.) package light cream cheese, softened
1 c. sifted powdered sugar
2 tsp. vanilla extract
1 tsp. grated orange rind

Cake:
Preheat oven to 350º
Combine first 8 ingredients
Set aside
Combine egg substitute and next 4 ingredients in a large mixing bowl; add dry ingredients, stirring until well blended
Pour into 13 x 9 x 2 inch pan coated with cooking spray
Bake for 30 - 35 minutes
Let cool completely in pan on a wire rack
Spread with orange cream cheese
Top with topping
Cover
Chill

Orange Cream Cheese Topping:
Beat cream cheese in a small mixing bowl with electric mixer until creamy
Gradually add powdered sugar, beating until blended
Stir in vanilla and orange rind
