2 beaten eggs
1 can cream style corn
1 can whole kernel corn - 1/2 drained
1/2 C melted butter
1 C sour cream
1 pkg Jiffy corn muffin mix
1 small can diced green chilies - mild
3/4 tsp chili powder
1/2 tsp crushed red pepper
1/4 tsp salt
1/2 tsp pepper
1-2 C sharp cheddar cheese for top

Directions:

Mix beaten eggs with corn and melted butter. Add sour cream and fold in muffin mix. Add spices and chilies. Pour into a 9 x 13" glass baking dish. Top with grated cheese. Bake at 425 degrees for 45- 50 minutes. Top should be crusty.
