This is so good, definitely one of Dad's favourite dishes. Using a good quality Indian curry is important. There are a few Ethnic food stores in Winnipeg selling a variety of curry's, or purchase small amounts at a Bulk store.

1/4 cup Butter
1/2 cup Honey
1/4 cup regular Mustard
4 tsp Curry Powder

2-3 Chicken Breasts ( with skin and bone however, 3-4 boneless skinless will do, but not nearly as tasty )
If your using bone in Breasts, you could cut them in half for smaller servings.

I do recommend to increase the sauce by 1 1/2 - 2 times as it is really good and great over rice.

Shallow baking pan like a cookie sheet. Using a baking pan with sides prevents the meat from "dry cooking" which can give it a more dampened coating. With this recipe you want a somewhat dry sticky coating

Oven 350 degrees

Mix above ingredients together in a microwave safe bowl as you may want to heat it for 45 seconds on High so the honey is not so thick.

Place Chicken pieces on a shallow baking pan lined with Parchment paper.
Baste the Chicken pieces with the Honey Curry sauce. Save some for later.

Bake at 350 for 20 minutes skin side down. Turn over to skin side up and baste again. Bake a further 30 - 40 minutes ( 20 - 30 minutes if using skinless breasts ) basting every 10 minutes or until honey curry sauce is finished.

For a crispier top, I Broil for a few minutes before taking out of oven.

Serve with Basmati Rice or Fragrant Rick for a side dish. Colourful vegetables such as Carrots and Broccoli or Green Beans make a WOW factor and your guests will be impressed.
