Chopped up chicken skin from the back, legs, thigh, neck, or breast
½ yellow onion, roughly chopped in big pieces

Directions:

Bring a heavy duty skillet to medium heat and add the chicken skin. Let the skin cook until its starts to render fat. Stir and continue to cook rendering more fat.
Add the onion and continue cooking until onion is caramelized, chicken skin is completely golden brown, and fat is totally rendered. Strain through a sieve or remove skin and onion pieces with a slotted spoon.
*Use the schmaltz for Pan Fried Latkes, Matzo Ball Soup, Chicken and Dumplings, etc. Refrigerate extra schmaltz up to a week or so in a container with a lid.
