2 dozen Little Neck clams rinsed and cleaned
4 scallions minced
3 garlic cloves sliced thin
½ or more dry white wine
1 tablespoon or so of unsalted butter
¼ cup olive oil
Black pepper to taste

Directions:
Directions:
In a Dutch oven or equivalent combine the olive oil, garlic, and ¾ of the scallions. Turn the heat to high and cook while stirring with a wooden spoon until fully softened.
Add the clams and shake around. Add the wine and black pepper and then put the lid on. Cook about 5 minutes or until all the clams have fully opened. Add the butter and mix all around.
Remove clams to serving bowls and spoon the sauce all the clams and garnish with remaining scallions. Serve with toasted Italian bread.
