6 hard-boiled eggs
1c.watercress leaves
1/4 c. mayonnaise
2 tbsp. chopped scallions
2 tbsp. chopped fresh tarragon leaves
4 slices of crispy bacon or ham cubes or thin strips of prosciutto
Salt and pepper to taste

Directions:
Directions:
Peel and slice hard-boiled eggs in half. Scoop the yolks into a food processor and puree with remaining Ingredients (except the bacon).
Cut crispy bacon or ham cubes or thin strips of prosciutto and place in the hollowed-out egg whites. Fill with the yolk mixture.
Chill and enjoy on St. Patrick's Day!
