2 medium chicken breast
1/2 c olive oil
1 garlic clove
4 medium tomatoes, crushed
1/2 c fresh parsley, diced
1/2 c fresh basil
1 tsp oregano
grated Romano or Paresan chesse

Directions:
Directions:
1. In a 5 quart slow cooker, spray it with nonstick cooking spray. 2. Place the chicken on the bottom. 3. In a small bowl, mix the olive oil, garlic, tomatoes, parsley, basil, and oregano. 4. Evenly pour this on top of the chicken. 5. Sprinkle with about a teaspoon of grated cheese. 6. Cover and cook on low for 6-8 hours. 7. Remove and serve the chicken topped with the bruschetta and sprinkle with additional cheese. This is best taken out of the slow cooker with a slotted spoon to drain off the juice.
