1.5 cups all-purpose flour
3 Tablespoons sugar
1 teaspoon each of baking powder and baking soda
1/2 teaspoon salt
1 3/4 cups of coconut milk or buttermilk
1 egg
2 Tablespoons melted butter
2 teaspoons vanilla
1 Tablespoon oil.

Directions:
Directions:
In a large bowl, whisk together flour, sugar, baking soda and powder and salt. Whisk together buttermilk, egg, butter and vanilla. Pour over dry ingredients. Whisk until combined but still slightly lumpy.
Heat a large non-stick skillet or griddle over medium-high heat; lightly brush with some of the oil or use butter. Pour batter, scant 1/4 cup at a time into the pan.
Cook until bubbles appear on top, about 3 minutes. Flip and cook until the bottoms are golden brown. About 1 minute.

About 100 calories per pancake or more if using coconut milk.
