Any firm, white fish fillet, catfish etc.
mayonnaise or mustard
1/4 c. melted butter
1 tsp. lemon juice
1 tsp. Worcestershire sauce
2 tsp. instant minced onion
1-2 T. dry bread crumbs
1 T. grated Parmesan cheese
fresh parsley, lemon wedges for garnish

Directions:
Directions:
Oven: 350º
Place fillets in buttered baking dish (skin side down) in a single layer. Lightly spread or brush mayo or mustard over each fillet. Combine melted butter, lemon juice, Worcestershire, onion, crumbs, and Parmesan. Spread coating onto fillets. Bake 20 to 25 min., or until fish easily flakes with a fork. DON'T over bake!

This recipe actually converted me into an eater of store-bought, frozen fish. Mayo or mustard coat is something I added later, so consider it an option to experiment with for yourself. -BAS
