Medium, smooth, firm, ripe tomatoes
Boiling water to cover
Cold water
Hot canning jars
1 tsp. salt (per each quart)
2 tsp. lemon juice (per each quart)

Directions:
Directions:
Wash tomatoes and scald in boiling water about 1 minute to loosen skins. Dip into cold water and drain. Peel and remove stem ends. Pack tomatoes into hot jars. Press down to release juices. Mashed strained tomatoes, add salt and lemon juice to each quart. Adjust lid. Process on 5 lbs. pressure for 10 minutes.
