1 Organic Turkey, thawed
Garlic cloves
Thyme, fresh
Bay leaf
Fresh Rosemary
Lemon wedges
Apples
Sea Salt
Fresh ground pepper

Directions:
Directions:
Remove giblets and bag inside turkey cavity. Rinse turkey well. Fill cavity with cut up garlic, Thyme, Bay leaf, Rosemary, a couple lemon wedges and apples. Season with salt and fresh ground pepper. (I use the brand RealSalt). Tie turkey legs up and together to keep moisture in.

Cover the turkey tightly with heavy foil. Bake at 220 overnight in oven for 10-14 hours depending on size of turkey. While turkey is hot, sprinkle with salt.

The key is to NOT check the turkey periodically, but keep it covered for several hours until you think it's ready to serve. Use your sense of smell to judge when that is.

Keep the turkey drippings to make the gravy. See gravy recipe in book. Gravy takes an hour to simmer so give yourself plenty of time.
