For the crust
1 stick butter, cut into 1-inch cubes, plus extra, melted, for brushing
1 1/4 cups flour
Salt
2-3 tablespoons ice cold water
9 1/2-inch tart pan

For the filling
24 ounces mushrooms, sliced
4-6 cloves garlic, chopped
Olive oil and butter for cooking the mushroom
Fresh thyme
Pepper and salt
4 eggs
1 cup milk
2 cups shredded cheese: cheddar, Gruyere, Manchego, etc.

Keep the butter chilled until it's needed.
Preheat oven to 350 F.

Place flour and salt in a food processor. Add butter and pulse until the mixture looks like wet meal. Add cold water 1 tablespoon at a time and pulse just until the dough begins to come together.

Put the dough in the tarte pan and press in and around the pan. Refrigerate until needed.

Heat olive oil and butter. Brown garlic, then add sliced mushrooms. Stir until mushrooms wilt and begin to give off their liquid. Add fresh thyme and pepper. Cook until liquid has evaporated from the mushrooms. Add salt and allow to cool.

Whisk together the eggs, milk, and salt.

Spread half the cheese over the crust. Add mushrooms and cover with remaining cheese. Pour egg mixture over all. Cook on a rimmed cookie sheet for 30-35 minutes
