6-7 oz Tilapia filet
a generous drizzle of lemon or lime juice (I especially like lime because it seems to go well with the heat of the chili flakes)
1 tbsp panko crumbs
1 tbsp finely grated fresh parmesan cheese
1/8 tsp kosher salt
1/8 tsp garlic salt
1/8 tsp lemon pepper
1/8 tsp crushed chili flakes (or to taste)
1 tsp vegetable oil

Leave oven rack in middle of the oven and turn on the broiler to about 400ºF.

In the meantime, preheat a large skillet over medium heat (make sure you use one with an oven proof handle). While the broiler and skillet are warming, drizzle fish generously with lemon or lime juice.

In a small bowl combine panko crumbs, shredded parmesan, salt, garlic salt, lemon pepper and chili flakes.

Add oil to heated skillet and lay fish in the skillet. Sprinkle panko mixture evenly over the fish. Immediately transfer the skillet to the oven.

Broil fish 5-7 minutes or until it flakes easily with a fork. If it starts browning too quickly you may need to adjust the heat or lower the oven rack.
