8 boneless chicken breasts (pounded thin)
2 pkgs Puff Pastry Sheets (Pepperidge Farms)
1 box Stove Top Stuffing Mix, chicken flavor
(prepared as directed)
1 Box frozen spinach, drained, and with sun dried tomatoes
2 Eggs (Beaten with water) for egg wash
Seasoning salt and pepper

4 tbs butter
6 shallots, minced
4 c chicken or beef broth or a mixture of both
1 c marsala

Directions:
Directions:
Place chicken breasts in plastic bag and pound until thin. toll out pastry sheet until large enough to cut into 4 squares. Place chicken on pastry, place 1 tbs of cooked stove top stuffing mix on top of each breast and pull pastry around it. turn it over, place on cookie sheet and brush egg wash over all of it. Bake at 350 for 25 minutes.

Melt 4 tbs butter in saucepan and add 6 minced shallots, saute 3 minutes and add 1/4 cup flour, cook 3 minutes more and add 4 c chicken or beef broth, (or two of each) and 1 cup marsala.
