1 c. all purpose flour
1/2 c. milk
1/2 c. buttermilk
1 tsp. baking powder
1 egg
1 tsp. paprika
1/4 tsp. hot sauce or cayenne pepper
1/2 tsp. dill (optional)
1 jar dill pickle slices, drained and patted dry
2 c. Panko bread crumbs
oil for frying
salt to season

Directions:
Directions:
Add enough vegetable oil to deep skillet to reach depth of 1 inch. Preheat oil to 360º-370º F for frying.

Mix together first eight ingredients to make batter. Sprinkle breadcrumbs over rimmed baking sheet.
Dab pickle slices on paper towels to dry them. Place about 1/2 cup of Panko bread crumbs in a bowl (add more as needed - If they get wet, they don't stick so it's best to work in small batches.)
Dip each pickle slice in the wet batter and then gently toss in the bread crumbs, move to prepared baking sheet. Let sit for a few minutes to half an hour, this will allow the crumbs to stick better.
Fry in small batches for 3-4 minutes or until brown and crispy. Carefully transfer fried pickles to paper towels to drain and season lightly with salt.

Serve with a tasty remoulade, spicy sriracha mayo, green goddess dressing, or ranch dressing. Absolutely delicious!
