General Tsao Chicken Recipe

4 cups of vegetable oil for frying
1 egg
1 1/2 pounds of chicken breasts cut in small cubes.
1 tsp of salt
1 tsp of white sugar
1 pinch of pepper
1 cup of cornstarch

Sauce
2 Tbsp of vegetable oil
3 chopped green onions
1 clove of garlic
1 strip of orange zest
1-2 red chillies finely chopped
1/2 cup of white sugar
1/4 tsp of ground ginger
3 Tbsp of chicken broth
1 Tbsp of rice vinegar
1/4 cup of soya sauce
2-4 tsp of sesame oil
2 Tbsp of cornstarch
1/4 cup of water

Directions:
Directions:
Heat oil in fryer to 375ºvF.
Beat egg in a mixing bowl.
Add chicken cubes, salt, sugar and pepper.
Mix really well.
Mix in 1 cup of cornstarch and coat chicken pieces.

In batches, drop the chicken cubes in fryer and fry till golden brown.
When chicken pieces are all fryed, return to fryer starting with the first batch previously fryed and fry for 2-3 minutes.
Drain on paper towel.

Heat 2 Tbsp of vegetable oil in wok.
Add onions and stir fry for 1 minute.
Add chilies and orange zest and fry for 2 minutes.
Add 1/2 cup of sugar, ginger, chicken broth, vinegar, soy sauce and sesame oil.
Bring to boil and cook for 3 minutes.
Disolve cornstarch in water and stir in boiling sauce. Stir until sauce is clear and thickened.
Stir in chicken and coat well.
