4 oz Butter (softened)
1/2 cup + 1 tsp White Granulated Sugar
2 Eggs
1 Lemon Zest (grated rind)
1-1/4 cups White Flour
1 tsp Baking Powder
2 tsp Milk
4 Tbsp Dark Corn Syrup
pinch of salt

Sauce:
4 Tbsp Dark Corn Syrup
2 Tbsp Water

Directions:
Directions:
Cream the butter and sugar until fluffy. Mix in eggs and lemon zest until smooth. Fold in flour, baking soda, and a pinch of salt. Finally, mix in the milk.
Grease a pudding basin with butter and pour in 4 tbsp of dark corn syrup. Place the spone cake mixture on top of the corn syrup. Cover with aluminum foil and place the pudding basin in a pan of hot water and place in the oven. Bake at 400º for 45 minutes (or until the top is golden brown). Remove from the oven and turn upside down on serving dish.
Mix and heat the sauce (water and dark corn syrup) and drizzle over the pudding. Serve warm.
