1 half salmon filleted and skin removed
2 oranges
2 lemons
2 limes
2 jalapeņo peppers
1 grape fruit
Herbs of providence
1/4 c. Olive oil
Salt
Pepper

Directions:
Directions:
Slice citrus as thin as possible conserve juice, place in a 12x12 baking dish, slice jalapeņo thinly, add to citrus, add olive oil and sprinkle generously with herbs, toss everything to mix juices as well as coat with the oil. Place salmon cut into serving size pieces on top. Season salmon with salt and pepper. Place in 300 degree oven uncovered and slow roast for 45 min. - 1hr. (Till flakes easily)

When serving use citrus and olive oil juice as a drizzle.

You can use any combination of citrus available. I have even added fresh sliced peaches . Instead of jalapeņo you can use red pepper flakes.
