Ingredients:

2 lb. stewing beef (prime round)
1 lb. small Irish potatoes
1 bunch small carrots
2 fresh tomatoes
3/4 lb. small onions
Bouquet garni (thyme, bay leaves, garlic, parsley, etc., in a cheesecloth bag)
2-1/2 pt. beef stock
Salt & pepper to taste
Flour & beef fat (or butter) to make roux

Directions:
Directions:
Cook beef in a small amount of water until it is tender; add vegetables and seasonings. Cook until vegetables are done; strain 1 c. of stock from the stew and thicken slightly with beef roux. Pour back into the stew and simmer about 1/2 hour or until ready to serve. Adjust seasonings. Serves 6.
