1 lb lean boneless pork
2 tbsp dry sherry
2 tbsp soya sauce
1 tbsp minced ginger root
1 tsp sugar
2 cloves garlic, minced
1 bunch broccoli (about 1 lb)
1 large carrot (cut diagonally)
2 tbsp (approx.) vegetable oil
1 1/2 c chicken stock
2 tbsp cornstarch

Cut pork across grain into thin slices about 2 inches long and 1/8 inch thick. In small bowl combine sherry, half of the soya sauce, ginger, sugar and garlic. Add pork; cover and marinate at room temperature for 30 minutes.
Meanwhile, peel broccoli stems; cut into slices about 1/4 inch thick and florets into bite size pieces. Peel carrot and cut on diagonal into slices about 1/4 inch thick.
Heat wok or fry pan over high heat until drop of water hisses and evaporates immediately; add oil, swirling to coat pan. Stir fry pork mixture for 2 to 3 minutes or until browned. Using slotted spoon, remove from pan and reserve.
Adding a little more oil if necessary to coat, stir fry broccoli and carrot for 1 minute. Return pork to wok, pour in all but 1 tbsp of the stock and bring to simmer, stirring once or twice. Cook, covered, until vegetables are tendercrisp, about 3 minutes. Blend cornstarch into remaining soy sauce and stock; stir into pan liquid and cook for 1 minute or until thickened, stirring constantly.
