1 head savoy cabbage cored and finely shredded
1 2 inch piece salt pork cubed
2 T butter
2 garlic cloves finely chopped
salt & pepper
1/4 C chives finely chopped
2 lbs potatoes grated (or uncooked frozen hash browns)
2 1/2 C heavy cream
1/2 C grated asiago cheese
1/2 C grated havarti cheese
1/2 C grated sharp cheddar cheese
1/4 C grated parmesan cheese

Put cubed salt pork in frying pan and cook til crisp but not burned. Re;move from pan and drain. Set aside. Add 1 T butter to the grease in the frying pan and when melted add the shredded cabbage and coat it with the butter. Slowly let it wilt. Add the salt pork season with salt & pepper. Remove from heat and add most of the chopped chives reserving some for garnish. Mix the grated cheeses except for the parmesan. Generously butter a 9 x 13 inch baking dish. In a large bowl combine the potatoes, 1 1/2 C of the heavy cream and 1 Cup of the mixed cheeses. Season with salt & pepper. Place a layer of the potatoes in the bottom of the dish, sprinkle with cheese and repeat with 2 more layers. Spoon the cabbage mixture on top and spread if evenly over the potatoes. Top with 2 more layers of the potato and cheese. pour the remaining heavy cream over the top then sprinkle with the parmesan cheese. Cover the dish with aluminum foil. Bake for 1 hour at 350º. Remove the foil and bake for 30 minutes more until golden brown. Let set for 10 minutes then garnish with chives and serve.
