 8 oz. pkg. cream cheese
 1 tsp. baking powder
 1/8 tsp. salt
 
 FILLING:
 1 C. powdered sugar
 1 8 oz. cream cheese
 4 Tblsp. butter
 1/2 tsp. vanilla
 
 Optional yummy variations: add a layer of jam, walnuts, or cinnamon and sugar. Or forget the cream cheese and put in cooked lemon pudding or Sean's yummy Cream Filling. Whatever sounds delicious.

 In separate bowl mix eggs yolks, cream cheese, and baking powder together. (I use mixer)
 Gently fold the egg whites into the egg yolk mixture- try to keep air in egg whites.
 Spread onto greased   cookie sheet. (the big one 11 3/4" x 16 1/2" ish on the bottom)
 Bake at 300º on middle rack of oven for about 25 min. (until it starts to turn golden brown)
 When cooked turn upside down onto a dish towel or pillowcase that has been heavily dusted with powdered sugar.
 Roll and let cool.
 Unroll "cake" and spread with filling.
 Slice and ENJOY!

                Notes: The original version of oopsies is to spoon on about 1/2" thick circles that are about the size of pancakes on the cookie sheet. I make 1/2 of the recipe and it makes 11 oopsies. They can be used in place of bread for sandwiches or garlic bread. They can also be used as buns but I think I would use 2 on each side because they are quite thin and very light. Be creative and see how many ways you can use these to replace bread.
