2/3 c water
1/4 c instant potato flakes
2/3 c white sugar
1/4 c instant dry milk powder
1/2 c butter or margarine
2 pkg or 2 T active dry yeast, in 1/3 cup warm water with 1/2 tsp sugar dissolved in it
5 - 6 c flour
3 large eggs + 1 egg for glazing
1 tsp salt
1/2 tsp vanilla
white sugar for sprinkling

Directions:
Bring water to a boil. Remove from heat. Beat in potato flakes. Stir in sugar, milk powder, and butter. Let cool.
Prepare yeast and let stand for 10 minutes until it is foamy. Stir.
Stir yeast into cooled potato mixture in a large bowl. Beat in 2 cups of flour with electric mixer on low. Beat in 3 eggs, salt, and vanilla.
Stir in 2 more cups of flour. Turn out of the bowl onto floured counter top.
Knead until smooth, adding more flour as needed.
Cover with plastic wrap in a clean, greased bowl. Let stand until doubled, about 1-1/2 hours.
Punch dough down, turn out onto counter top and knead lightly to release air. Cover with a clean tea towel and let stand for 10 minutes.
Shape dough into desired type of rolls or into two loaves. Place in greased pans. Cover with tea towels and let rise for 45 to 60 minutes.
Beat 1 egg and brush over tops of rolls or loaves. Sprinkle with white sugar.
Bake at 350º F, until browned, about 25 to 35 minutes. Turn out onto racks to cool.
