Homemade Crust :
1 c all-purpose flour
1/2 tbls sugar
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
2 tbls unsalted butter, cold, cut into small pieces
1/4 c grated cheddar cheese, or Colby cheese
1/3 c buttermilk (or regular skim milk works)
Alternative Crust
1 tube (8 oz) reduced-fat crescent rolls

Toppings:
1 - 8 oz pkg organic cream cheese
3/4 envelope ranch salad dressing mix
2 tbls organic fat-free milk
1/2 c each chopped fresh broccoli, cauliflower, carrots,
(optional, green pepper, sweet red pepper and mushrooms)

Lightly grease an 8 x 11 glass baking dish. Put all the dry ingredients into a bowl. Cut the butter pieces into the dry ingredients until mixture is crumbly. Stir in cheese until evenly distributed. Make a well in the dry ingredients and add the buttermilk (or skim milk). Stir well with a wooden spoon. Let the dough sit for 3 minutes. Sprinkle the dough with flour and press into the glass baking dish. Bake at 375° for 11-13 minutes or until golden brown. Cool completely. In a large bowl, beat the cream cheese, salad dressing mix and milk until smooth. Spread over crust. Sprinkle with vegetables. Cover and refrigerate for at least 1 hour before serving. Cut into 16 pieces. Yield: 8 servings.
