Beef tenderloin
Fresh Rosemary
Fresh Thyme
Chevril
EVOO

Directions:
Directions:
Chop and blend rosemary, thyme, and chervil.
Add spices to EVOO
Rub over roast
Refrigerate overnight
Sprinkle with salt and pepper
Sear in hot EVOO until browned
Place in preheated 350º oven
When meat reaches 120º on meat thermometer, remove from oven
Let site for 15 minutes before carving
SERVE WITH HORSERADISH SAUCE (see sauces) OR MUSHROOM GRAVY (which is fabulous) also see sauses
