1/4 C butter
1 onion chopped
1-2 carrots diced
1-2 Ribs of celery diced
1/2 pound raw chicken cubed
1/3 C flour
3 C chicken stock
1/2 tsp salt
1/4 tsp pepper
2 C milk
1 & 1/2 cups of cooked rice

Directions:
Directions:
In a large sauce pan melt butter, add onion, celery and carrot, cook gently for 5 minutes.
Add chicken cook 3 more minutes till chicken looses its raw appearance.
Sprinkle with flour cook 3-4 minutes.
Add chicken stock and bring to a boil, season with salt and pepper.
Cook 15 minutes.
Add milk bring to a low boil Add rice and cook 5-10 minutes.
( if soup is too thick add a bit more milk or broth if it is too thin bring to a low boil for 5-10 minutes)
Adjust seasoning with salt and pepper.
