4 filets haddock
1/2 c milk
1/4 c melted butter or margarine (1/2 stick)
half stack Ritz crackers, crumbled
1/2 cup Parmesan cheese
1 T Italian seasoning
1 tsp dried dill
salt and pepper to taste

Directions:

Preheat oven to 350º
Lightly grease a sheet pan with cooking spray.
Place filets on baking sheet and brush with milk. Flip over to coat the other side.
Sprinkle with salt and pepper.
In a bowl, combine Ritz crackers, cheese, Italian seasoning,dill and melted butter. Mix until all ingredients are moistened.
Cover each filet completely with cracker mixture, make more if needed.
Bake for about 15 to 20 minutes, or until fish is fully cooked and flaky.

I have made this recipe with garden vegetable crackers and it is amazing! you must use crackers though, not bread crumbs, in order to get the yummy buttery crunch!
