1/2 c unsalted butter at room temperature
1 c sugar
2 lg eggs
1 tsp vanilla
1 c sour cream (full, not low fat)
2 c all purpose flour
1 1/2 tsp baking powder
1 tsp baking soda
1/4 tsp salt

Topping:
1/4 c brown sugar
1 Tbsp all purpose flour
1 tsp cinnamon
'1/2 c walnut or pecan pieces (or frozen blueberries)
1 Tbsp unsalted butter, melted
(2 c apples, sliced [Golden Delicious/Granny Smith/Macintosh, etc.])

Basic cake + two variations (others are up to your creativity)

Preheat oven to 350F

Cream butter and sugan until smooth. Add eggs, one at a time, stirring well after each addition. Add vanilla, stir; add sour cream, stir well.

In a separate bowl, combine all the dry ingredients for Topping.
For Apple Sour Cream Coffee Cake, toss the apples with half of the topping. Do the same if you are making Blueberry Sour Cream Coffee Cake...or ...
Scrape half of the coffee cake batter into a greased 8 inch round cake pan, and level. Sprinkle half the topping on top. Then put in the rest of the cake batter and level. Sprinkle the rest of the topping mixture + apples or blueberries on top.

Bake 35-45 minutes, until cake tester in the center of the cake comes out clean. Serve warm, or at room temperature. Ice cream would be great!

You could do this with other fruits, or with chocolate and cinnamon. You could add some Mace and/or Nutmeg. Experiment and make it your own.
