2 eggs
1 cup sugar
1 tsp vanilla
1 cup flour
1 tsp baking powder
1/4 tsp salt
1/2 cup milk
1 tbsp margarine

Topping: 3 tbsp melted butter
5 tbsp brown sugar
2 tbsp milk
1/2 cup coconut

Directions:

350º 30 min Greased 8x8 pan

Beat eggs, sugar and vanilla until lemon coloured. Separately measure flour, baking pdr and salt. Add to egg mixture, stirring til combined.

Heat the milk and butter til boiling and add all at once to batter beating til smooth. Pour into pan and bake as above

Combine topping ingredients in pot on stove and stir til melted. Spread topping onto baked cake and broil slightly til brown

The cake is so light and fluffy.
Don doesn't like coconut so I have used rhubarb topping, or not made topping at all.
