2 sticks butter
2 eggs
2 c packed light brown sugar
2 tsp vanilla
1 3/4 c flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
3 c quick oats
8 oz package Heath Toffee bits
1 c sweetened coconut flakes (optional)

Directions:
Directions:
Beat butter, eggs, brown sugar and vanilla in large bowl until blended. Add flour, soda, cinnamon and salt. Stir in oats, toffee and coconut with spoon.
Drop dough by rounded teaspoon onto greased cookie sheet.

Bake at 375º for 8-10 min.
