2 cups fresh pumpkin guts( stringy part, separated from seeds)
3 1/2 cups flour
2 tsp baking soda
1 1/2 tsp salt
2 tsp cinnamon
2 tsp nutmeg
3 cups sugar
4 eggs, beaten
1/2 cup water
1 cup oil
1 cup chopped pecan(raisins, chopped apple, chocolate)

Directions:
Directions:
350 degree preheat.
Use scissors and fingers to separate guts, make sure will mix well in batter. Combine flour, soda, salt, cinnamon, nutmeg and sugar in large bowl. Add eggs, water, oil and pumpkin. Stir until blended. Add nuts or other substitution. Bake 1 hour (toothpick test)
Cool slightly and take out of pans. Cool on rack.
