3 oz. egg whites *
1 tsp vanilla extract
4 cups confectioners' sugar (10 x powdered)

* The carton egg whites available at the grocery store produce a more consistent and stable icing.

In a large bowl, combine egg whites and vanilla and beat with an electric mixer until frothy. Slowly add in sugar, a little at a time, beating slowly until all sugar is incorporated. Beat on high for about 5 minutes, until icing becomes glossy and forms stiff peaks. A small amount of food coloring may be added in this last phase to achieve a desired color, otherwise the icing will be an opaque white.

Spread icing over cookies in a thin, even layer, making sure the cookie is completely coated. Icing will dry out, so keep the bowl covered with a damp paper towel or plastic wrap while using. Icing may be made ahead and refrigerated for up to 3 days in an airtight container. This recipe produces enough icing to cover 5 dozen small cookies or 4 dozen large cookies.

Allow icing to harden on cookies completely before stacking.
