Ingredients:  
Cooked potatoes, cooled and cubed
4 grated carrots
chives or finely sliced green onion
2 or 3 hard boiled eggs
2 celery stalks sliced thin

1 cup Mayonaise
2 tbsp dijon mustard
paprika

Directions:
Directions:
In a large bowl mix top 5 ingredients saving one egg for slicing on top.

Combine mayonnaise and dijon mustard then stir into salad mixture. Top with sliced egg and sprinkle with paprika.

Quantities of ingredients can vary to what's on hand.
