3 c. all-purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. unsalted butter
1 c. sugar
2 lg. eggs, beaten
1 c. orange marmalade

Icing ingredients:
2 tsp. grated orange zest
1 tsp. grated lemon zest
1/4 c. orange juice
1 tsp. lemon juice
3 Tbsp. unsalted butter, softened
3 c. confectioners sugar
1/2 tsp. salt
Directions:
Directions:
Preheat oven to 300º.
Cookie directions: Generously butter a cookie sheet. Sift together the flour, baking soda, and salt into a bowl and set aside. In a work bowl, add the butter and beat on low speed. Add the sugar and continue beating for about 2 minutes until fluffy. Add the eggs and mix well. Add the reserved dry ingredients and the marmalade and mix thoroughly. Drop dough in 2 Tbsp. amounts onto prepared cookie sheet. Bake for about 20 minutes or until the cookies are light brown.
Icing directions: Combine orange and lemon zests and juices in a bowl and set aside. In a separate bowl, beat the butter on low speed. Add 1 c. confectioners sugar and blend thoroughly. Add remaining sugar, salt, and citrus mixture, and blend until smooth. Ice the cooked cookies.
