1 c. butter
2 c. sugar
3 c. flour
4 tsp. baking powder
¼ tsp salt
4 eggs, separated (beat the egg whites to soft peaks)
Vanilla and almond extract*
About 1.5 c. milk

* if someone in your family does not like the taste of almond or has nut allergies, substitute a flavour of your choice

Cream butter, sugar and egg yolks. Add dry ingredients and mix well. Add vanilla and almond extracts to taste. Add milk. Lastly, add the egg whites, folding into batter.

Grease a 9”x13” cake pan. 350⁰ for about 50 minutes. Round layer cake pans – about 35 min. When cooled, run a knife around edge of pan and turn cake out onto serving plate. Buttercream icing goes very well with this cake.

This is a beautiful thick and heavy white cake, closer to a pound cake than a commercial or packaged cake mix – it showed up at every birthday dinner in our home when I was growing up !
