Ingredients:  
~ 1/2 c. Onion, Chopped
~ 2 Tbsp. Butter
~ 1 c Chicken Broth
~ 1/2 tsp. Baking Soda
~ 2 Tbsp. Cornstarch
~ 2 Tbsp. Water
~ 3/4 C Sauerkraut, rinsed and drained
~ 2 c. Half & Half
~ 2 c. Cooked Corned Beef
~ 1 c. Shredded Swiss Cheese (4 oz.)
~ Salt & Pepper to taste

~ Sauté onion in butter until tender.
~ Add broth & baking soda.
~ Combine cornstarch and water until smooth; gradually adding to pan.
~ Bring to boil. Cook and stir for 2 minutes or until thickened. Reduce heat.
~ Add sauerkraut, half & half and corned beef
~ Simmer and stir for 15 minutes.
~ Add Cheese and heat until melted. Add Salt and pepper.

~Optional: Garnish with more cheese and rye croutons.
