About 2 pounds Fresh green beans
5 Thick sliced hickory smoked bacon strips
½ sweet onion
Butter & bacon grease
Salt & pepper

Dice bacon into about 1 inch pieces and cook until it is just under the crispy stage, remove to bowl. Reserve 2 tbsp of bacon grease. Dice onion and cook with 1 tbsp of butter & 1 tbsp bacon grease on medium heat until cooked but not brown in color. Place onion in bowl with bacon. Cut ends off the green beans and rinse in cold water to remove any dirt. Place beans in a pot with about ½ inch of water. Cover and cook on medium high heat until water comes to full boil and steam can be seen inside pot. Do not remove the cover but turn off heat and let beans sit in covered pot for about 5 minutes. Drain water from beans and add 2 tbsp of butter, onions and bacon along with salt & pepper to taste.
