3 tbsp butter
3 tbsps flour
1/2 cup milk
1/2 cup heavy cream
1/2 tsp salt
Pinch white pepper
Pinch nutmeg

Directions:
Directions:
Melt butter over moderate heat, remove from heat add the flour, stir thoroughly
Add the milk and cream, beat with a whisk to dissolve, return to heat and continue to whisk to dissolve flour
Bring to a boil, when thick and smooth, reduce heat to lowest point ot simmer for 2-3 minutes, stir in salt pepper and nutmeg. Stir to prevent a skim forming if you are not using right away, add a little cream or milk when reheating.
Makes 1 cup
