4 ounces sugar (½ cup)
4 ounces butter (½ cup)
4 ounces golden syrup (slightly less than ½ cup)
Lemon juice (half a lemon)
4 ounces flour (1 tablespoon less than ½ cup)
1 tablespoon ground ginger

Directions:
Directions:
Place sugar, butter, golden syrup and juice in saucepan and melt it gently. When melted, add flour and ginger to the mixture. Blend thoroughly. Grease a cold tray. Put teaspoons of six at a time. Bake at 350° until golden brown. Leave a few minutes then wrap around a wooden spoon. Use piping bag to fill with cream.

Hayden's grandmother made these every Christmas. After dinner the women would help put these together. Cannot be filled with whipped cream ahead of time as they soften.
