Crust for 1 pie (see "Nan's Pie Crust")
1 lb. whole milk ricotta cheese
3 eggs, whisked
2 cups of milk
2 tbs. cooking starch
1 cup sugar

Directions:
Directions:
1. Make pie shell.
2. Mix all ingredients together by hand. Pour into pie shell.
3. Bake 10 minutes at 450°F.
4. Turn oven temperature down to 350°F (without opening oven). Bake 70 to 75 minutes
5. When done, let cool and sprinkle with cinnamon.

Do not beat filling too much. And remember, you may come close, but (in my opinion....) nobody will ever make it as good as Nan!
