Asparagus liquid from canned Asparagus
3 T Butter
2 T flour
Worcestershire Sauce (dash)
4 slices American Cheese
Lemon Juice
Boiled eggs
Crackers (crushed)

NOTE: I prefer Ritz Crackers

Directions:
Combine liquid, Worcestershire sauce and lemon juice to equal 1 cup (add water if needed)
Mix butter and flour to make a white sauce. Add liquid to butter and flour mixture.. Blend and add cheese stirring until all the cheese melts and sauce is thick and bubbly. In a casserole dish layer asparagus spears, egg slices, crackers and cheese sauce until all is used. Top final layer with crushed crackers.Bake @ 350º until sauce bubbles.
I now use fresh Asparagus and use the steaming liquid. Also I use Smoked Gouda for my cheese.

I first fell in love with this dish when we celebrated Christmas on the farm with Grandmother and Grandfather Tackett. Aunt Christine would always make the casserole after they arrived Christmas Eve Night. It was hard to wait for dinner because we exchanged presents after dinner and all was cleaned up. My picture I have on this recipe is picture of the buffet on Christmas Eve.
