1 lb. yellow split peas
8 cups water
1 large onion (chopped)
1 ham bone (with ham pieces)
1 cup chopped carrots
1 bay leaf
1 tsp. Salt
1/2 tsp. Pepper
2 tbsp. Parsley

Directions:
Directions:
Rinse and drain peas. Put in large pot, add water, and rest of ingredients (use lid). Bring to a boil, reduce heat and simmer covered. Simmer for approximately 1 hour or longer until peas are tender. Take out ham bone and bay leaf and serve.

This recipe was inspired by my Aunt Lorraine. This is where I had my first ever bowl of yellow pea soup.
