Pastry for 9-inch deep-dish pie
3/4 cup cooked, chopped chicken
1/4 cup chopped green bell pepper
1 cup shredded Cheddar cheese
2 tbsp chopped pimiento
6 eggs, beaten
1 cup half-and-half
1 tbsp instant minced onion

Directions:
Directions:
Line a 9-inch quiche dish or pie pan with pastry. Trim excess pastry around edges. Prick bottom and sides of pastry with a fork. Bake at 400º for 3 minutes; remove from oven and gently prick with a fork. Bake 5 minutes longer. Let cool on rack.

Sprinkle chicken, cheese, green pepper and pimiento in prepared pastry shell. Combine remaining ingredients, beat well; pour over ingredients in shell. Bake at 425º for 30 to 40 minutes or until set. Let stand for 10 minutes before serving.

Years ago, I would cook this on Christmas Eve or for brunch on Christmas Day. Nicci used this recipe in a 4-H "Egg Cookery" contest when she was 11 years old.
