1 oxtail, cut at joints or 1/2 lb. beef roast, sliced
1/2 tsp. salt
1/4 tsp. pepper
1 bay leaf
1/4 tsp. thyme
8 - 9 cups water
4 tbsp. rice or barley
2 medium carrots, cubed
1 1/2 onions, coarsely chopped
1 potato, peeled and cubed
2 stalks celery, chopped
5 slices of bacon, cut fine
1 tbsp. sherry
1 - 2 tbsp. chopped parsley

Directions:
Directions:
In soup kettle, place oxtail or beef, seasonings and water. Bring to a boil. Simmer for 3 hours. Strain broth. Remove meat from bone or cut up beef slices. Return meat to broth and add rice or barley. Cook 25-30 minutes. Add carrots, onions, potatoes, celery and bacon. Simmer 30 minutes more. Add sherry. Garnish with parsley
